Recipe: Lentils and Rice

Lentils and Rice (Egg and Dairy Free)

1 cup dry lentils
4 cups water
1 tablespoon vegetable oil
1/2 onion, diced
1 tablespoon cumin
1 teaspoon cinnamon
1/2 cup rice
1/2 teaspoon salt
1/2 onion -- sliced into rings
1 teaspoon oil

In a medium saucepan, simmer the lentils and water for 20 minutes.

Heat the oil in a large saucepan. Saute the diced onion until it is translucent (about 5 minutes). Add the cumin and the cinnamon. Add the rice, then pour the lentils into the rice mix along with the water. Add the salt.

Cook according to the rice directions (brown rice, 40 minutes ; white rice 20 minutes). Do not cover the mixture.

While the mixture of lentils and rice is simmering, in a skillet, heat the oil. Saute the sliced onion for about 5 minutes. Serve the mixture with the onions on top.
