Recipe: Strawberry Soup (using white wine or apple juice, make ahead)

STRAWBERRY SOUP

1 pint fresh strawberries, hulled
1/2 cup white wine or apple juice
1/2 cup sugar
2 Tbsp lemon juice
1 tsp grated lemon peel

In a blender, combine all ingredients. Cover and process until smooth.

Pour into 2 bowls; cover and refrigerate until thoroughly chilled, 1-2 hours.

Makes 2 servings
