Makes about 50
375g minced chicken
1/2 cup packaged breadcrumbs
1 egg
1/2 finely chopped, dried apricots
1/2 cup finely chopped macadamia nuts or almonds
1 tbsp light soy sauce
3 tbsp chopped fresh coriander
fresh coriander leaves extra
Blend or process all ingredients except extra coriander leaves. Roll into balls, top with coriander leaf, and steam in a single layer for about 8 minutes or until cooked through. Serve hot or cold
