Easy Fried Mushrooms

When I lived in Clarksville, early 1980's

mushrooms
fresh lemons
pancake mix
corn chex
salt to season after cooking

Wash mushrooms and cut into pieces, (I keep whole, if bite size, larger I half) sprinkle mushrooms w/lemon. Add water to pancake mix to make thick batter. Crush Corn Chex very fine. Dip mushrooms in batter, then roll in Corn Chex. Deep fry. Remove and sprinkle with salt.
