Recipe: Presto Stuffed Cherry Tomatoes

Presto Stuffed Cherry Tomatoes

Makes 12 appetizers

2 cups (1 pt) cherry tomatoes
1 pkg (3 oz) cream cheese, softened
2 tbsp fresh lemon juice
1/4 cup freshly grated parmesan cheese
1/4 cup finely chopped pine nuts (optional)
3/4 cup finely chopped parsley
1/4 cup finely chopped watercress
1 1/2 tsp basil, crumbled
2 cloves garlic, finely chopped

1. Cut tops off cherry tomatoes; scoop out pulp. Drain tomatoes upside down on paper towel while preparing filling.
2. Beat cream cheese with lemon juice in med, bowl until smooth. Stir in remaining ingredients.
3. Fill cherry tomatoes with mixture. Chill

NOTE: One large tomato can also be used. Scoop out pulp and fill as directed. Chill thoroughly. Carefully cut into wedges.
