Recipe: TN Caviar

TN Caviar

From some TV show, maybe the Frugal Gourmet
Sounds like a new year's treat to me

1 c dried black eyed peas
4 slices bacon
1/3 c wine vinegar
1 c veggie oil
1 close garlic, crushed
1/2 tsp pepper
1/2 tsp pepper sauce
1 tsp savory salt

Soak peas overnight. Drain water and add fresh water to peas. Add bacon and simmer until peas are tender, but not mushy; drain.

Combine remaining ingredients and add to peas. Marinate peas in mixture for 5 days. Drain thoroughly. Serve with thin slices of cornbread.
