Cheese Snowflakes

makes 24

8 oz. wedge Parmesan cheese, preferably good quality such as Parmigiano-Reggiano, rind removed

1. Heat oven to 375F. Line cookie sheets(s) with foil. Coat with nonstick cooking spray.
2. Shred the cheese using large holes of a box grater or shredding disk of a food processor.
3. Drop shredded cheese by slightly rounded TBSP 3 in. apart onto the foil lined cookie sheet(s). Spread each into a 3 1/2-inch round, with uneven edges.
4. Bake 6-8 minutes until pale golden. Let cool, then gently peel each off foil.
