Recipe: Chicken Salad Log

Chicken Salad Log
From: Scubamare,TN
From Lainie Osburnsen, 1990

1 (8 oz) pkg. cream cheese, softened
1/4 c. mayo
1/2 tsp salt
1/8 tsp pepper
2 tbsp lemon juice
4 drops Tabasco (or to taste)
2 c finely chopped chicken
2 boiled eggs, chopped
1/4 c chopped green onions
1/4 tsp ground ginger

Mix cheese, mayo, lemon, salt, pepper, ginger and Tabasco. Add remaining ingredients. Shape into 8x2 logs; chill 4 hours. Serve with crackers. Doesn't need it, but logs can be rolled in toasted sesame seeds, chopped green onions, or topping of your choice.
